As a result, the majority of the Western world, while becoming accustomed to the foods of China, India, Malaysia and Singapore, were largely unaware of the wonderful flavours of Thailand.
Thai food is unique in its blends of hot, sour, sweet and salty flavours. These are derived from the chilli, palm sugar, dried shrimp paste, the famous fish sauce NamPla, Galangal, Thai basil, lime leaves, and lemongrass. Thai food is normally shared with rice at the centre and a variety of dishes around, so everyone can experience each of the different dishes. The food is eaten with a spoon and fork. A knife is never seen as the food is prepared so that nothing is large enough to require cutting. Contrary to most expectations, chopsticks are rarely used.
